Whew! So, Mother's Day 2011 is in the books. I worked all day Saturday on my Mother's Day menu and let hubby take over today with the serving. I still did the cleaning and the dishes. Today's menu featured:
- Salmon with goat cheese on crackers
- Edamame hummous (courtesy of my friend Joe who is in the Trading business)
- Fruit salad with orange Cointreau sauce
- Hash brown, bacon and cheddar cheese casserole
- Dandelion pancakes
- Asparagus and salmon frittata
- Quinoa salad
- Crepes with Nutella
When I asked my daughter what her favorite thing was (thinking she'd answer a food from the above list) she answered "that people came". How cute is that?
